Sanchi Hatcho Miso is made from soya beans without cereal grains, the ancient process includes a full 2 year growing old in cedarwood kegs, with a huge pile of rocks on top to create pressure. Hatcho Miso is the most savoury tasting miso and especially suitable for long cooking and a base for Miso Soup.
