Chai is black tea with spices – cardamom, cinnamon, ginger, cloves and usually black pepper. Pukka and Yogi spice theirs differently, so they are worth trying against each other rather than assuming chai is chai.
Traditionally it is brewed with milk rather than having milk added at the end, which is a different drink and worth doing once properly.
Black tea wants water just off the boil and three to four minutes. Under-brewing is why people think a tea is weak; over-brewing is why it turns bitter. Take the bag out rather than leaving it in.
