Nori sheets are the ones used for sushi and can be toasted and torn over rice or soup. The green nori sprinkle is a condiment – scattered on food at the table rather than cooked with.
Agar is different again: a setting agent derived from seaweed, used as a plant-based alternative to gelatine. It sets firmer than gelatine and needs to be boiled to activate, which is where most first attempts go wrong.
Sea vegetables concentrate iodine from seawater, and some contain a great deal of it. Iodine matters for thyroid function, and both too little and too much are a problem – which is why regular large amounts of seaweed are not a good idea.
As an ingredient a few times a week, nori is fine for most people. If you have a thyroid condition, take thyroid medication, or are pregnant, speak to your GP before eating seaweed regularly.
Toast nori sheets briefly over a low flame or in a dry pan to bring them back if they have gone soft. They lose crispness quickly once the pack is open, so reseal it properly.
For agar, use roughly a teaspoon of flakes per 250ml of liquid, bring it to a proper boil and simmer a few minutes to dissolve, then let it set at room temperature. It will not set if you have not boiled it.
