A 500g bag of dried pulses makes a great deal more food than people expect, since they roughly double in weight once cooked. Worked out per portion, nothing else in the shop comes close on cost.

They also keep for years in a sealed jar, which makes them the single most useful thing to have in a cupboard when you have not planned dinner.

Chickpeas, butter beans and mung beans want an overnight soak, then a fast boil for ten minutes before simmering. Butter beans in particular need cooking properly soft – underdone they are unpleasant.

Red split lentils need no soak and collapse in twenty minutes into a dal. Brown lentils hold together better, and the French type hold their shape entirely, which makes them the one for salads.

Do not salt until they are nearly cooked, or the skins toughen and they take far longer. That single point accounts for most failed pulse cooking.

Cook the whole bag and freeze what you do not use. Cooked pulses freeze perfectly and it turns an evening's planning into four quick meals.
