Xylitol and erythritol are sugar alcohols. They look and measure much like sugar, with erythritol the milder of the two on digestion. Stevia is a leaf extract and intensely sweet, so it is used in tiny amounts and usually blended with something else for bulk - which is what products like Natvia are.

Coconut sugar and date syrup are not sugar-free at all; they are less refined sugars with more flavour, and they suit baking where you want that.

Sugar does more than sweeten - it browns, holds moisture and gives cakes their structure. Swapping it out one-for-one rarely works first time.

Erythritol and xylitol measure closest to sugar and are the easiest starting point. Stevia needs a bulking ingredient. Expect a paler bake and a slightly different crumb, and expect to adjust a recipe once or twice before it is right.

Xylitol is dangerous to dogs even in small amounts, so if you have one in the house keep it well out of reach and be careful with anything baked using it.

Sugar alcohols can cause bloating or a laxative effect if you use a lot at once, particularly xylitol. Most people get on with them better by building up gradually.

FAQ

Is xylitol safe around pets?

No. Xylitol is seriously toxic to dogs even in small quantities. Store it out of reach and do not give them anything baked with it.

Can I swap sweetener for sugar one-for-one?

Erythritol and xylitol come closest and are the usual starting point. Stevia does not - it is far sweeter by weight and needs something to make up the bulk.

Why does erythritol taste cooling?

It absorbs a little heat as it dissolves, which registers as a cool note on the tongue. It is more noticeable on its own than in a finished bake.

Are these suitable for diabetics?

Sugar alcohols and stevia affect blood glucose less than sugar does, but if you are managing diabetes please take dietary advice from your GP or diabetes nurse rather than from a product page.
