Marigold is the benchmark, and the colour of the tub is how everyone navigates it – green for the original, purple for less salt, and the vegan and organic versions alongside. The 2kg tub is far cheaper per litre if you cook a lot.

Kallo cover the cubes, organic and otherwise, including the just-bouillon range. Bays Kitchen make low FODMAP stocks, which are genuinely hard to find elsewhere.

Powder is the most flexible – you can use a half teaspoon to season something rather than committing to a whole cube. Cubes are easier to portion for a pan of soup and travel better.

Freja's bone broths are a different product altogether: actual broth, chilled, in a 500ml carton, made by simmering bones rather than by blending powder. They cost more for the obvious reason.

Stock powders are salty by nature – that is much of what they do. If you are watching salt, the reduced-salt Marigold is the sensible swap, and using slightly less powder than the tub suggests works perfectly well.

Most of these are suitable for vegetarians and many for vegans, but check the tub. The bone broths obviously are not.

FAQ

What is the difference between the green and purple Marigold?

Green is the original Swiss Vegetable Bouillon. Purple is the reduced salt version. Both are vegetable based; the vegan and organic versions are separate tubs again.

Is bouillon the same as stock?

In practice yes – bouillon is simply the French word. What is in the tub here is a powdered stock you make up with hot water.

Are these suitable for vegans?

Many are, including the vegan Marigold and much of the Kallo range. Check the individual tub. Freja's bone broths are not.

Is the 2kg tub worth it?

Per litre of stock, considerably. It is a large tub, so keep it sealed and dry and use a clean dry spoon – damp is what spoils stock powder.
