Herbal tea is not tea

Strictly, tea comes from Camellia sinensis. Herbal infusions - tisanes - are made from other plants entirely, which is why they are naturally caffeine-free rather than decaffeinated. Rooibos, peppermint, chamomile, nettle, hibiscus and fennel are the most-bought here.

Single herbs or blends

Single-herb infusions are one plant and taste of it. Blends combine several, often with fruit pieces or spices, and are where most of the flavoured range sits. Cotswold and Hambleden Herbs supply loose single herbs by weight if you prefer to make your own.

Brewing

Herbal infusions generally want water at a full boil and a longer steep than black tea - five to ten minutes, covered, so the volatile oils do not escape with the steam. Unlike black tea they do not turn bitter with over-steeping, so there is little to lose by leaving them.

A note on claims and pregnancy

Herbal teas are foods and we make no health claims for them. Some herbs are not recommended during pregnancy or breastfeeding, or alongside certain medicines - liquorice and senna among them. If you drink a particular herbal tea in quantity, or you are pregnant, it is worth a word with your pharmacist.

Pukka blend organic herbs to their own recipes and hold B Corp certification - their blends are more considered than most, and it shows in the cup. Yogi work from Ayurvedic formulas and are the ones to try if you like a spiced infusion.

Heath & Heather have been going since 1920. Hambleden Herbs grow a good deal of what they blend, which is rare, and Cotswold Teas are the small British name worth knowing.

Peppermint after a meal, chamomile in the evening, ginger when you want something warming, nettle through the spring. That is roughly how people use them, and it has held for generations.

Rooibos is the one to know if you want something that takes milk - naturally caffeine free, with a rounder, slightly sweet flavour that behaves like a builder's tea.

Herbal infusions want a full boil and longer than you would give black tea - five minutes at least, and covering the cup keeps the volatile oils in rather than letting them steam off.

Unlike green tea, they do not turn bitter if you leave them. Longer simply makes them stronger, so brew to taste.

Are herbal teas caffeine free?

Nearly always, but check the ingredients - some blends include green tea, matcha or guarana, which do carry caffeine.

How long should I brew them?

Five minutes or more, covered. They do not go bitter the way green tea does, so longer just makes them stronger.

Can I drink these while pregnant?

Some herbs are not recommended in pregnancy - raspberry leaf and certain blends among them. Check the pack and ask your midwife if you are unsure.

Which is best in the evening?

Chamomile is the traditional one, and lemon balm and valerian blends are taken the same way. All are caffeine free.
