King Soba makes organic noodles, with a strong focus on gluten-free varieties — a genuinely useful niche, since most noodles are wheat-based.
Ingredients lists are short, and the noodles are made from single grains or simple combinations rather than long formulations.
Buckwheat soba is the flagship. Despite the name, buckwheat is not wheat and is naturally gluten free — though some soba blends do include wheat, so the pack is worth checking.
Beyond soba there are brown rice and sweet potato noodles, plus other varieties, most of them organic and gluten free.
