The oil is mechanically extracted without heat or chemicals and meets strict limits on acidity and defects. It is the top grade.
Should olive oil be kept in the fridge?
No — cool and dark in the cupboard is right. Cold makes it cloudy and thick, which is reversible but unhelpful.
Can I fry with extra virgin olive oil?
Yes, for normal pan cooking. Its smoke point is fine for most jobs, though you would not choose it for deep frying on cost alone.
How long does olive oil keep?
Best within a year or so of harvest and a couple of months of opening. It does not spoil dangerously but loses the peppery character.
