Bold Bean Co are the reason a lot of people have started caring about tinned pulses. Their jars cost more and are noticeably better – bigger, softer beans in a liquid worth keeping rather than pouring away.

Biona, Mr Organic and La Bio Idea cover the standard organic tin, which is the sensible everyday buy. Dried from Infinity Foods is much the cheapest per portion if you are prepared to plan an evening ahead.

Chickpeas and most beans want an overnight soak, then a proper rolling boil for ten minutes at the start, then a simmer until soft. Do not salt them until they are nearly done, or the skins toughen.

Lentils and split peas need no soaking and cook in half an hour, which makes them the easiest thing in this category to start with. Red lentils collapse into a dal; green and puy hold their shape for salads.

If pulses have historically disagreed with you, the usual advice is to build up slowly rather than starting with a large plate, and to rinse tinned ones well. Cooking them soft rather than firm helps too.

They are also the cheapest protein in the shop by a distance, and they keep for years in the cupboard, which is worth remembering.

FAQ

Do I need to soak lentils?

No. Lentils and split peas cook from dry in around twenty to thirty minutes. Chickpeas and the larger beans do want an overnight soak.

Are the jarred beans worth the extra?

Bold Bean Co are noticeably better in texture and size, and the liquid is good enough to use in the dish. Whether that is worth it depends on what you are making.

Should I rinse tinned pulses?

For most dishes, yes – it removes the starchy liquid and some of the salt. The exception is chickpea liquid, which whips and is worth keeping if you want it.

Which lentil for which dish?

Red lentils break down and are right for dal and thick soups. Green, brown and puy hold their shape and suit salads and anything where you want them distinct.
