Clipper have been blending in Dorset since 1984, and their unbleached bags are the detail we point people at - most tea bags are bleached, and theirs are not. Organic and Fairtrade across most of the range.

Pukka blend organic herbs to their own recipes and hold B Corp certification. Yogi work from Ayurvedic formulas. Heath & Heather have been going since 1920, and Hambleden Herbs grow a good deal of what they blend.

Loose leaf gives more flavour for the money and lets the leaves open properly, which is most of the difference people notice. It needs a pot or an infuser and about thirty seconds more attention.

Bags win on convenience and the unbleached ones are a fair compromise. If you are drinking several cups a day, loose is usually cheaper as well as better.

Black tea takes a full boil and three to five minutes. Green wants around 80 degrees and two - boiling water scalds it and turns it bitter, which is the single most common reason people think they dislike green tea.

Herbal and fruit infusions are more forgiving: full boil, and longer generally just makes them stronger rather than bitter. Keep tea in a sealed tin away from light and anything strong-smelling - it picks up odours readily.

Is herbal tea caffeine free?

Usually, but check the ingredients - some blends include green tea, matcha or guarana, which do carry caffeine.

What is rooibos?

A South African plant, naturally caffeine-free, with a rounder and slightly sweet flavour. It takes milk perfectly well if that is how you drink tea.

Why does my green tea taste bitter?

Almost always water that is too hot, or brewed too long. Let the kettle stand two or three minutes and give it around two minutes in the cup.

How should I store tea?

A sealed tin, cool and dark, away from coffee and spices. Tea takes on the smells around it faster than almost anything else in the cupboard.
