What does cold-pressed mean for coconut oil?
The flesh is pressed without heat above about 45°C, so the oil is not refined, bleached or deodorised. It keeps more of the aroma and flavour of fresh coconut.
Can I swap coconut flour for plain flour?
Not directly. Coconut flour absorbs a great deal more liquid — as a rough guide use about a quarter of the quantity and add an extra egg or more liquid.
Why is my coconut oil solid?
It sets below roughly 24°C and melts above. Either state is fine and does not affect quality.
Is coconut nectar the same as coconut sugar?
Same source, different form. Nectar is the liquid sap, reduced but not crystallised; sugar is the same sap dried. Nectar pours, so it suits drinks and dressings.
