What is the difference between a conserve and a jam?
A conserve keeps larger pieces of fruit and has a softer set. Jam is cooked further so the fruit breaks down. Tiptree label theirs accordingly.
Which preserves go with cheese?
The firmer jellies — quince, medlar and crab apple — are the traditional choices, as they hold their shape on the plate and balance a salty cheese.
How long does an opened jar keep?
Refrigerate once opened and use within the period on the label, usually a few weeks. Always use a clean spoon — crumbs in the jar are what spoil a preserve.
Is the fruit grown in the UK?
A good deal of it is grown on the farm at Tiptree in Essex. Citrus for the marmalades is imported, as it cannot be grown here.
