A gently spiced fruit cake under smooth layers of marzipan and fondant icing, cut as a single 75g slice rather than sold as a whole cake. It is both gluten free and suitable for vegans, which is a difficult combination to pull off in a fruit cake without it turning to sand. This one does not.
