Organic Barley Flour is milled from whole barley grain, giving a mild, slightly sweet, nutty flavour that works well blended with wheat flour in bread, or used on its own in flatbreads and traditional barley bannocks. It has less gluten-forming protein than wheat flour, so bread made purely with barley flour tends to be denser — many bakers blend it with a stronger flour for a better rise while still getting some of barley's flavour and nutrition. It's also a traditional thickener for soups and stews. Packed in plastic-free packaging, and as it's made from barley, it does contain gluten, so it isn't suitable for a gluten-free diet. Certified organic and vegan, with no added sugar. Store in an airtight container in a cool, dry place.
