Organic Barley Grain (pot or hulled barley) keeps more of its bran and germ than pearled barley, giving it a chewier bite, nuttier flavour and higher fibre content, though it does take longer to cook as a result. It's a traditional addition to hearty soups and stews, where it naturally thickens the broth as it cooks, and works equally well cooked and cooled into a grain salad with roasted vegetables and a punchy dressing. As barley contains gluten, it isn't suitable for a gluten-free diet, but it is certified organic and vegan. Simmer in plenty of water or stock for around 45-60 minutes, or soak overnight to speed things up. Store in an airtight container in a cool, dry place, where it will keep well for many months.
