Unlike dried beans, lentils don't need soaking — just rinse and simmer until tender, typically around 20-25 minutes. They're certified organic, vegan and gluten-free, with no added sugar, making them an easy plant-based source of protein and fibre for most dietary patterns. Their striking black colour also makes them a genuinely attractive addition to a dish, not just a filler ingredient. Store in an airtight container in a cool, dry cupboard, where they'll keep for many months.
