Organic Butter Beans are large, creamy-textured white beans with a mild, buttery flavour that makes them especially good at soaking up other flavours in a dish. They're a Mediterranean and Middle Eastern kitchen staple, equally suited to slow-braised stews, garlicky bean mash, or tossed cold into a herby salad with olive oil and lemon. As with most dried beans, they benefit from soaking for at least eight hours, or overnight, before simmering until soft and tender. Certified organic, vegan and gluten-free, with no added sugar, they're a straightforward plant-based source of protein and fibre. Once cooked, butter beans keep well in the fridge for a few days, so they're a good candidate for batch cooking. Store the dried beans in an airtight container in a cool, dry place.
