Organic Couscous is tiny steamed and dried granules of durum wheat, prized for how quickly it prepares — simply cover with an equal amount of boiling water or stock, cover and leave to stand for five minutes before fluffing with a fork. It's a North African staple, traditionally served alongside tagines and stews, and just as popular cold in Mediterranean-style salads with vegetables, herbs and a citrus dressing. As it's made from wheat, it does contain gluten, so it isn't suitable for a gluten-free diet. Certified organic and vegan, with no added sugar, it's one of the quickest grains to prepare for a midweek meal. Store in an airtight container in a cool, dry place, where it will keep well for many months.
