Dark Green Lentils, in the style of French Puy lentils, are prized for holding a firm bite and their shape well after cooking, unlike softer red or yellow lentils that break down. That makes them ideal for lentil salads, warm grain bowls and dishes served alongside roasted vegetables or fish, as well as the usual soups and stews. Like other lentils, they don't need soaking — just rinse and simmer until tender, typically 25-30 minutes. Certified organic, vegan and gluten-free, with no added sugar, they're a naturally good source of plant protein and fibre. Their slightly peppery, earthy flavour also holds up well to punchy dressings like mustard vinaigrette. Store in an airtight container in a cool, dry cupboard, where they'll keep for many months.
