Organic Haricot Beans are the small white bean behind classic baked beans, though they're just as good home-cooked in a slow-simmered tomato sauce, a French-style cassoulet, or a simple bean stew with garlic and herbs. Their mild flavour and creamy texture mean they take on whatever they're cooked with, making them a useful all-rounder pulse. Like most dried beans, they need soaking for at least eight hours, or overnight, before simmering until tender. Certified organic, vegan and gluten-free, with no added sugar, they're a straightforward source of plant protein and fibre for everyday cooking. Once cooked, they'll keep in the fridge for a few days, making a big batch worth cooking at once. Store the dried beans in an airtight container in a cool, dry place.
