They're one of the quickest pulses to cook from scratch, breaking down into a soft, golden mash that's ideal for dhal, soups, stews and salads. There's no need to soak them first — just rinse and simmer until tender, usually in around 15-20 minutes, which makes them a genuinely convenient midweek staple. Certified organic, vegan and gluten-free, with no added sugar, they're a simple way to add plant protein, iron and B vitamins to a meat-free meal. Once cooked, leftovers keep well in the fridge for a few days or freeze in portions. Store the dried lentils in an airtight container in a cool, dry cupboard.
