Organic Brown Teff Flour is milled from one of the smallest grains in the world, naturally gluten-free, and the traditional base for Ethiopian injera flatbread thanks to its slightly sour flavour once fermented. Beyond injera, it works well in pancakes, flatbreads and gluten-free baking, where its mild, nutty, earthy flavour adds character without overwhelming other ingredients. Because teff flour absorbs liquid quickly, recipes using it often need slightly more liquid than those using wheat flour. Certified organic, vegan and gluten-free, with no added sugar, it's a nutritious way to add variety to gluten-free baking. Store in an airtight container in a cool, dry place, away from moisture.
