Just Natural Organic Vital Wheat Gluten is packed in plastic-free, certified home-compostable packaging, and is the concentrated protein extracted from wheat flour, most commonly used to make homemade seitan — a firm, meaty plant-based protein popular in vegan and vegetarian cooking. A small amount added to regular bread flour also helps strengthen dough and improve rise, particularly useful when baking with heavier wholegrain or low-protein flours. Because it's almost pure gluten, it's strictly for those who tolerate wheat well and isn't suitable for anyone avoiding gluten. Certified organic and vegan, with no added sugar, it's a specialist ingredient for home bakers and plant-based cooks alike. Store in an airtight container in a cool, dry place, away from moisture.
