Just Natural Organic Vital Wheat Gluten is packed in plastic-free, certified home-compostable packaging, and is the concentrated protein extracted from wheat flour, most commonly used to make homemade seitan — a firm, meaty plant-based protein popular in vegan and vegetarian cooking. A small amount added to regular bread flour also helps strengthen dough and improve rise, particularly useful when baking with heavier wholegrain or low-protein flours. Because it's almost pure gluten, it's strictly for those who tolerate wheat well and isn't suitable for anyone avoiding gluten.
