Organic White Sushi Rice is a short-grain rice grown to develop the light, sticky texture needed for rolls, nigiri and rice bowls once cooked and seasoned with rice vinegar, sugar and salt. Rinse it thoroughly before cooking to wash away excess surface starch, then let it steam, covered, once cooked before folding through the seasoning while still warm — this is what gives good sushi rice its characteristic glossy, cohesive texture. Beyond sushi, it also works well in Japanese-style rice bowls and onigiri. Certified organic and vegan, with no added sugar in the rice itself, it's a straightforward way to bring an authentic result to homemade sushi. Store in an airtight container in a cool, dry place to keep it fresh for months.
