Spekulatius is the thin, crisp spiced biscuit that turns up across Germany and the Low Countries every December, pressed with a pattern and flavoured with cinnamon, cardamom and clove. Wicklein bakes this organic version on spelt flour rather than wheat. A 150g bag of minis, sized for a biscuit tin.
