Cereals & Grains

Flakes, whole grains and mueslis, almost all of it Infinity Foods Organic in 450g to 1.4kg bags. Buckwheat, millet, quinoa and brown rice flakes alongside the oats, plus black rice and the less usual grains.

Buying grains loose in a bag rather than boxed and branded is markedly cheaper per bowl, and there is nothing added. See also dried fruit and seeds for what goes on top.

They are a Sussex co-operative who have been doing this since the 1970s, and the range is certified organic across the board. We have dealt with them for most of the time we have been trading.

The bags are plain and the ingredient lists are one line long, which is rather the point. You are paying for the grain rather than for a box and a cartoon.

Flakes are rolled, so they cook in minutes – buckwheat, millet, quinoa and brown rice flakes all make a porridge, and all four are worth trying if you have got bored of oats. Quinoa and buckwheat flakes are naturally gluten free.

Whole grains take longer and reward it. Black rice is worth cooking simply the first time to see what it actually tastes like. Most whole grains benefit from a soak beforehand, which shortens the cooking and makes them easier to digest.

The Deluxe Muesli is the one to buy if you want fruit and nuts already in it; the plainer base mueslis are cheaper and let you add your own. Either way the 1.4kg bag works out considerably better per bowl than a supermarket box.

Grains keep well but not indefinitely. Decant into a sealed container, keep it cool and dark, and use wholegrain flours and flakes within a few months – the oils in them turn eventually.

FAQ

Which flakes are gluten free?

Quinoa, buckwheat and rice flakes are naturally gluten free. Oats are a separate question, as they are usually processed alongside wheat – check the individual pack.

Do whole grains need soaking?

Most benefit from it. A few hours in cold water shortens the cooking time noticeably and many people find them easier to digest that way.

Is organic worth paying for on grains?

That is your call. What certification gives you is a documented standard for how it was grown, rather than a claim on the front of a box.

How should I store them?

Airtight, cool and out of the light. Wholegrain flakes and flours contain natural oils that go stale over time, so buy a size you will actually get through.
