The gluten-free range is milled in a dedicated gluten-free facility and labelled gluten free, which under UK and EU rules means no more than 20 parts per million. Always check the individual pack, as the organic range is not gluten free.
What is the difference between the organic and gluten-free ranges?
They are separate. The organic range includes wheat, spelt and rye flours, which contain gluten. Only the products labelled gluten free are suitable for a gluten-free diet.
Do I need xanthan gum?
Usually, unless the blend already includes it. It replaces some of what gluten does structurally. Check the flour's ingredients and follow your recipe.
Can I swap gluten-free flour into a normal recipe?
Not reliably one-for-one. Gluten-free doughs need more liquid and behave differently, so a recipe written for gluten-free flour will give better results.
How should I store flour?
In a cool, dry cupboard, sealed. Wholemeal and nut-based flours have a shorter life than white. Each pack carries its own best-before date.
