The Infinity Foods bags are plain raw nuts – nothing added, nothing done to them. That is what you want for baking, for milks, or for eating by the handful without also eating a lot of salt.

Minton & Donello cover roasted, salted and chocolate-coated. Worth knowing which you are buying, because the difference in salt between a plain almond and a salted one is considerable.

Cashews blend smoothest, which is why they are the base for most dairy-free creams and sauces. Almonds are the all-rounder and the one to buy if you are only buying one. Walnuts and pecans are softer and better in baking than in a snack bowl.

Brazils are the largest and richest of the lot, and a couple go a long way. Nut mixes are the sensible buy if you cannot decide.

Nuts are mostly oil, and oil goes rancid. That is the whole of the storage question. Airtight, cool and dark, and the fridge or freezer is genuinely worth it for walnuts and pecans, which turn faster than the rest.

A stale nut tastes obviously wrong – sharp and slightly bitter. If a bag has been open a while, taste one before you put the lot into something.

FAQ

Are the nuts raw or roasted?

The Infinity Foods Organic bags are raw and plain. Minton & Donello cover the roasted, salted and coated versions. Each product page says which.

How long do they keep?

Several months sealed and cool, but less once opened. Walnuts and pecans turn fastest, so keep those in the fridge or freezer if you are not getting through them quickly.

Which nut is best for making nut milk?

Cashews, because they blend completely and need no straining. Almonds make the more traditional milk but need a bag or a fine sieve.

Do you sell nuts suitable for people with allergies?

These are nuts, and they are handled in facilities that handle other nuts. If you have a nut allergy these are not for you – check any product page for the full allergen information.
