This matters more than people realise with flax and chia. Whole flaxseed largely passes through you intact – milled is the form that is actually useful, which is what Linwoods make.

Pumpkin, sunflower and sesame are fine whole. The AA grade pumpkin seeds are the larger, better looking ones and worth the difference if you are eating them by the handful.

Chia thickens in liquid, which is why it makes a pudding – roughly a tablespoon to a small glass of milk, left in the fridge. It needs the soaking time, so it is a thing to start the night before.

The rest go on porridge, into bread, over salads or toasted in a dry pan, which improves sesame and pumpkin considerably. The Omega Four mix is the sensible buy if you want a bit of everything.

Seeds are oily and turn in the same way nuts do. Milled flax turns fastest of all, which is why it comes in sealed bags and belongs in the fridge once opened.

Whole seeds keep well in an airtight jar somewhere cool and dark. Taste one if a bag has been open a long time – a stale seed is unmistakable.
