Harvested in December 2024, the Koroneiki and Athinolia olives are processed within 24 hours of picking, achieving an exceptional 0.17% acidity and 500 mg/kg polyphenols. Superior mechanical extraction yields a filtered oil with a distinctive character: grassy opening notes evolve into herbaceous and tomato aromatics, whilst the palate reveals creamy texture with apple undertones and a peppery finish.
