Converting to Biodynamic farming was an informed choice for David Paxton when he realised the health of his soil was suffering. The results over 10 years later are wines of immense structure and fruit clarity. McLaren Vale Shiraz is his calling card for how good Biodynamically farmed Organic Shiraz can be in the vales south of Adelaide. Rich, textural Shiraz oozing black fruit and pepper flavour.
