Raw honey is simply honey that has not been heated or fine filtered. It keeps the pollen and the character of wherever the bees were, which is why Littleover's British jars taste different from one another.

Set and runny is not a quality difference - all honey crystallises eventually, and set honey has simply been allowed or encouraged to. Warm a crystallised jar gently in water and it goes runny again.

MGO measures methylglyoxal in milligrams per kilo; UMF is a broader grading that also checks authenticity. Higher numbers mean more of the compound and a higher price, and the flavour gets stronger and more medicinal with it.

Both are genuine gradings rather than marketing numbers, and reputable manuka is traceable to New Zealand. If a jar carries neither rating, be sceptical about what you are buying.

Honey still in the wax comb, exactly as the bees left it - nothing extracted, filtered or handled. The wax is edible and most people simply eat it along with the honey.

It is the closest you will get to honey as it exists in the hive, and worth trying once even if you go back to jars afterwards.

FAQ

What does raw honey mean?

Unpasteurised and not fine filtered, so the pollen and natural character remain. It is not a legally defined term, so the producer's own description matters.

What is the difference between MGO and UMF?

MGO measures methylglyoxal content directly. UMF is a broader New Zealand grading that also verifies authenticity. Both are genuine gradings.

My honey has gone solid - is it off?

No, it has crystallised, which all honey does eventually. Stand the jar in warm water and it will go runny again.

Can babies have honey?

Not under twelve months. That is standard NHS advice and applies to all honey, raw or otherwise.
