Infinity Foods have supplied organic wholefoods out of Brighton for decades, and buying nuts and seeds this way costs a fraction of supermarket packets for the same thing.

It also means no plastic tray, no nitrogen flush and no marketing on the front. Just the nuts, which is rather the point.

Nuts and seeds are high in fats, and fats go rancid. Keep them sealed, cool and dark, and use walnuts and pine nuts fastest - they turn soonest and most noticeably.

If you buy in larger bags, decant what you will use into a jar and keep the rest in the freezer. They freeze perfectly and come out fine.

Toasting transforms most nuts and takes three minutes in a dry pan. Seeds too - toasted pumpkin seeds on a salad are a different food to raw ones.

Chia and flax need grinding or soaking to be much use, since whole they largely pass through. Linwoods do them milled if you would rather not.

How should I store nuts and seeds?

Sealed, cool and dark. For larger quantities, keep the bulk in the freezer and decant what you need - they freeze without any loss.

How do I know if nuts have gone rancid?

Smell them. Rancid nuts turn sharp and faintly like old paint. Walnuts and pine nuts go first, so check those before using.

Do I need to grind chia and flax?

Flax yes - whole seeds largely pass through undigested. Chia works either way, since it gels when it meets liquid.

Are these organic?
